Raffaello Cake

Happy December is coming to an end. Undoubtedly, you must have had many chances to indulge yourself with yummy cookies and desserts over holiday but December is not over yet. Before we start with New Year’s resolutions such as detox, diet, healthy lifestyle and so on (borringgg :)), New Year, New Me 🙂 I think we deserve to have at least one more piece of yummy dessert before we enter the New Year. This Raffaello Cake is a perfect choice for New Year’s Eve dessert.  

I am not a cake master, nevertheless this Raffaello cake is super easy to make and if you know Raffaello Chocolate, you will love it, it tastes even better.

ingredients

INGREDIENTS:

4 Eggs

180g Sugar

180g Unsalted Butter; softened

120g Flour

100g Almonds and Walnuts (crushed toasted)

2 teaspoons of Baking Powder

900ml Whipping cream

200g White Chocolate (or white chocolate Nutella)

1 cup of Mascarpone

12 Raffaello Chocolates

1 teaspoon Almond or Vanilla extract

1 teaspoon Rum

Coconut flour

STEP BY STEP

STEP 1:

Preheat oven to 180C. If you have time, make one part of the cream a day before.

Beat half of the whipped cream with white chocolate in a pot.  Slowly cook the chocolate. Leave the cream in the fridge overnight. Add mascarpone and mix it all.

STEP 2:

Mix butter and sugar, add egg by egg. Mix baking powder with flour and add crushed almonds and nuts.

Place batter into a greased pan. Bake it for 40 minutes, use a wooden toothpick to check for readiness. If the cake is baked, dough should not stick to the toothpick.

STEP 3:

Beat the rest of the whipped cream with 2 spoons of white Nutella chocolate, vanilla extract and coconut flakes.

FORMING THE CAKE

In a small bowl, combine water and sugar. Cook until sugar melts. Add tablespoon of rum. Slice cold baked cake into three pieces. Soak each piece with the mixture (leave the top layer). The easiest way to soak is to spread an equal amount of liquid over the cake, you can use a brush or a spoon.

Make sure that the cake is cold before you start applying the cream. Apply cream 1 to first layer of the cake, cover it with crushed almonds and coconut flakes. Apply cream 2 to 2nd layer of the cake, cover it with crushed almonds and coconut flakes or as you wish (next time I will add fresh strawberries).

Use the rest of the cream for decoration. On top of the cake add Raffaello Chocolates, coconut flakes, anything you desire.
